Old Fashioned Potato Salad
A classic simple potato salad with tender potatoes and creamy mayo. Perfect for any gathering.

- 2 lbs Russet Potatoes
- 7 Western Family Eggs
- 1 cup Western Family Real Mayonnaise
- 4 tbsp Western Family Sweet Relish
- salt & pepper
Place eggs in a pot covered with cold water. When the water starts to boil, cover the pot and turn off the heat.
Let the eggs continue to cook for 10 minutes. Transfer eggs to a bowl of ice cold water until cool to the touch, peel and chop.
While the eggs are cooking peel and cube the potatoes into 1 inch pieces and put in a large pot. Cover them with water and bring to a boil for about 15 minutes uncovered, or until tender. Drain and let the potatoes cool before mixing so they won’t crumble. It helps to cool the potatoes in the refrigerator for about an hour.
In a separate large bowl, mix the Western Family Mayonnaise and Western Family Sweet Relish together. Add the eggs and Potatoes and mix gently.
