Bring a large pot of salted water to a rolling boil, add the orzo pasta and cook for 6-7 minutes, or until slightly past al dente. Drain the orzo and toss it with olive oil so that it doesnโt stick together. Allow the orzo to cool completely.
While the orzo is cooling, prepare the Greek Salad Dressing by adding all the ingredients together in a bowl and whisking vigorously.
In a large bowl, toss together the cooked orzo, cucumbers, feta, and olives. Drizzle the dressing over the salad, add oregano, season with salt and pepper to taste, and toss to coat and serve.
