Tips for keeping your Game Fresh for Your Butcher
1) Place a layer of ice in a cooler (a 48 quart cooler will hold a deer of up to 140lbs, live weight)
2) After dressing and skinning your deer, quarter it.
3) When splitting game, cut the animal down the spine.
4) Split the hind from the front by leaving one rib bone on the hind and the remainder of the ribs will be on the front.
5) Immediately after removing each quarter, put it onto a tarp or big clean plastic bag and place a thin layer of ice over the carcass.
6) You will want to use bagged ice to help reduce the body temperature as quickly as possible (this helps preserve the meat).
7) Keep the drain plug on your cooler open. This allows melted ice to drain, preventing it from damaging the meat.
8) Bring into your local Freson Bros. Butcher Shop as soon as possible.
