Necessity is the mother of invention, and during the challenging 2023 Fox Creek wildfires, this couldn't have been more true. 
While the town was under evacuation orders and regular deliveries had stopped, our Fox Creek Store Manager, Kyle Amos stayed behind to support the brave firefighters, military, and police personnel working tirelessly to protect the community. With limited fresh produce available, Kyle's creative kitchen experiments led to some unexpected combinations that kept our first responders well-fed during those three challenging weeks with the support of Athabasca Oil Company and Paramount Resources who helped sponsor meals. 
Inspired by Kyle's resourceful spirit during that time, we're proud to share this recipe. With surprising ingredients like grape tomatoes and cucumbers, this medley is a perfect tribute to the creativity and community spirit that emerged during those challenging times.
Course Side Dish

Ingredients
  

  • 1 cup Grape Tomatoes
  • 1 cup Cucumber cut into ¾ inch cubes 
  • 1 cup Pineapple cut into ¾ inch cubes 
  • 1 cup Granny Smith Apples cut into ¾ inch cubes 
  • cup Strawberries stemmed and halved 
  • 1 Lime zest and juice 
  • 1 tsp Salt

Instructions
 

  • Toss all the ingredients together in a bowl and allow to sit for 5 minutes. Re-toss the salad to distribute juices and serve immediately.
